Chocolate Brownie Cookies

Today I bring you chewy brownie cookies with a side of AND WE’RE BACK.


Wait, wait.  I shouldn’t say “we”.   YOU have been here all along.  I have proof.  You sent me the nicest warmest, friendliest, most-loyal hey, where are you? and are you ok? and dubbya tee eff, where the heck is dinner?! emails.   You really know how to make a girl who is eyeballs-deep in poop and laundry and one list away from hyperventilation feel missed.


And I missed you too.  Is that weird?  That sounds weird.  You may be invisible, but we’ve had good times.  I write stream-of-consciously about how much I love food and planning and Teen Mom, and you try to keep your eye rolls in check as you search for a recipe amidst all this rambling.  Are you doing that right now?  We have such a healthy relationship.   YouknowJenelle?

So really, by “we” I mean me.  I’m back!  I’m done with this whole maternity leave nonsense, and I’m ready to get back in the saddle.  Apron?  Yee-haw!  A certain baby can fend for herself now that she’s got two little chomper teeth buds and made a few alliances in day care.  She can handle a mom who maintains a food blog, says me.


Truth be told, I really missed this creative outlet.  I’m a few genes and a right brain short of being a creative type, but this little piece of the electronic universe has been pretty receptive to my grainy photographs and loose command of the English language.  Plus it’s fun.   And I missed fun.

So, are we ok?  We cool?  Let’s just blame the baby and move on to dessert.  As one does.

The other day I was looking at the dessert section of this blogscape, and I think I saw a tumbleweed go by.  The list is dusty, friends.  I know we’re still supposed to be all resolution-focused at this point in January, but in the spirit of beefing up my sweets category we’re slipping this one in.

And in true Impatient-Gal-Can’t-Bake form, this is a total cheater’s cookie!  No fancy mixers needed, no long list of ingredients, no use of 1,245 bowls and measuring utensils.  And they're healthy!  Ish.  Healthy-ish.  Powdered sugar + cocoa powder + egg whites = chewy, crunchy, macaroon-like, flourless, chocolate crinkle cookies.  Could I please use more adjectives and fewer commas?  No, for real.

Chocolate Brownie Cookies
Adapted from Bon Appetit
Makes 24-30 cookies depending on size

Ingredients:
3 c powdered sugar
3/4 c unsweetened cocoa powder
1 tsp kosher salt
2 large egg whites
1 large egg
4 oz semi-sweet chocolate chips

Preparation:
Place oven racks in the lower and upper thirds of the oven, and preheat to 350 degrees F. Line two baking sheets with parchment paper or silicone baking mats, and set aside.

In a large bowl, whisk together the sugar, cocoa powder, and salt until well combined. Whisk in the egg whites and egg, and then use a rubber spatula to combine it all together. The batter will be sticky and tough to stir. Fold in the chocolate chips.

Spoon the batter by the tablespoonful onto the prepared baking sheets. Bake, rotating the sheets once midway, until the cookies are puffed, cracked, and set around the edges, about 14-16 minutes. Transfer the baking sheets to wire racks, and let the cookies cool on the pan.
