Grilled Turkey Burgers with Special Sauce

I have this thing about making my own burgers.

I just love it so.  Not only do I get to mix ground beef or turkey or chicken with all kinds of different spices and vinegars and herbs and come up with crazy fun combinations, but I also get to PHYSICALLY mix meat.  Like, with my hands.

It's a little embarrassing how much I like squishing the meat together.  Some would say it's my siren song.  I experience the same insane urge when I'm in the check-out line at the grocery store and I'm eyeing up the individually-wrapped Entenmann's or Little Debbie snack cakes.  I don't want to eat them.  I just want to squish them to smithereens with my bare hands.

Yeah.  Too much?  I don't care.  I love it.

These burgers are super healthy and very easy to make, and they come with their own special sauce!  What's not to like?  They don't photograph well...or possibly I just really stink at photographing burgers in general, but they taste very special.  I served mine with a side of barley and brown rice with mixed vegetables for a complete meal.

And since my siren song isn't totally under control, I wouldn't leave your ground meat or Twinkies unattended around me.  So what's yours?  I'm dying to know!

Grilled Turkey Burgers
Special Sauce

Serves 4

4 tbs green onions, chopped and divided
2 1/2 tbs orange juice, divided
1 1/2 tbs low-sodium soy sauce, divided
1 tsp ground ginger
1 clove garlic, minced
1 lb lean ground turkey breast
1/2 c reduced-fat mayonnaise
2 tbs Dijon mustard
1 tbs honey
Whole wheat hamburger buns
Large romaine lettuce leaves (optional)

Preheat your grill or a grill pan to medium-high heat.  Combine 3 tbs of the green onions, 2 tbs of orange juice, 1 tbs of soy sauce, ginger, garlic, and turkey breast in a large bowl.  Make sure the meat is mixed with the other ingredients, but just until combined.  Don't over-mix!

Divide the turkey mixture into 4 equal portions, and shape each into a 3/4-inch-thick patty.  Place the patties on the prepared grill, and grill 6 minutes per side or until done.

To make the Special Sauce, combine the remaining 1 tbs of green onions, remaining 1/2 tbs orange juice, remaining 1/2 tbs soy sauce, mayonnaise, mustard, and honey in a small bowl.  Refrigerate until ready to use.

When the burgers are cooked, spread 2 tbs of the Special Sauce over the top half of each bun.  Place lettuce leaves (if using) on the bottom halves of the buns, and top each with a turkey burger.  Sandwich together, and enjoy!

I love to squish meat as well- I cut up and ground my own beef for burgers for a special dinner, and it was even more satisfying to form those patties and fry them up. I also love to cut apples- I eat one a day so I have the perfect rhythm down for them.

These turkey burgers will definitely be hitting my grill sometime this summer, they look great.
