Jalapeno Poppin' Stuffed Chicken

If I didn't have a cheesy, melty dinner to look forward to my day would just be complete crap.


That sounds bad, doesn't it?

It's just, it's been raining here non-stop for days.  I'm over it.  I miss the sun!  Where's the golden tan I should have by now?

Heh.

But I shouldn't complain.  It's Spring afterall, and the ground has been in need of a good soaking.  The weeds in our landscaping beds are looking real healthy, let me tell ya.

Instead let's focus on the positive.  Like...

...the gorgeous, handmade window treatments that my Mom made for my kitchen windows.  Um, no words.  I want to hug them every day.  I wish I could hug her every day!  Mom, do you want to start a business together?  It'll be like playing PayDay...I'll be the banker!

...I solved Merle Reagle's crossword last week.  This is a positive because it confirms my superior intellect.  Or that if I stare at letters long enough I find alternate ways to spell words, which is totally allowed, did you know this?  New York Times, I'm coming for you.  No, but seriously.  I solved it for real.  Boom.

...Modcloth!  Oh my stars, why did I not know about you sooner, little wallet-emptying gemstone?

...our new dining room chandelier that we got around to hanging this week.  We spent a nice chunk of time screwing in each individual crystal on this puppy.  212 to be exact.  212.  Still positive!

...and cooking dinner!  Especially dinner on the Richter scale.  Er...Scoville scale?  Either way, I like a good recipe that makes you sweat and shakes up your world.

I was completely inspired this week by Gina from Skinny Taste.  Her recipes are so fun and very healthy, and she loves stuffing chicken!  That's usually not my thing, but this jalapeno cheese-stuffed chicken recipe I couldn't pass up.  It's got all the potential of a good, acid reflux-inducing jalapeno popper!

I adapted the recipe a tad, but the overall result is still a healthy, fun, and zippy stuffed chicken dinner.  And let me pass along a lil' pro tip.  After working with a jalapeno, do yourself a favor and wash your hands.  Like, immediately.  I can tell you from experience that you don't want to forget this step and then go touching any sensitive areas...mmkay?

As a side dish, I steamed some brown rice and mixed it with Trader Joe's frozen, fire-roasted corn.  I thawed it, relax.  Then I tossed in some scallions and a little lime juice, and the result was a fun and fancy side dish.

Don't forget to remove the toothpicks!  Stay positive, my friends.

Jalapeno Poppin' Stuffed Chicken
Yields 4 servings
Adapted from Skinny Taste

Ingredients:
1 jalapeno pepper, seeds removed and chopped
3 oz 1/3-less-fat cream cheese, softened
4 oz reduced fat shredded cheddar cheese
2 tbs scallions, chopped
1 lb thin-sliced skinless, boneless chicken breasts
Juice of 1 lime
2 tsp canola oil
Salt/pepper

Preparation:
Preheat the oven to 450 degrees F.  Lightly spray a baking dish with cooking spray.

Combine the jalapeno, cream cheese, shredded cheese, and scallions in a medium bowl.

Lay the chicken cutlets on a work surface, and spread 2 tbs of the cream cheese mixture on each cutlet.  Loosely roll each one, and secure the ends with toothpicks.


Mix the lime juice, canola oil, and salt/pepper in a small bowl.  Brush each chicken roll-up liberally with the lime oil, and then place each seam side down in the baking dish.  Bake for 22-25 minutes.

Look at those sutures!  Shoulda been a surgeon.
Remove the toothpicks before serving!  Add steamed brown rice and corn for a complete meal.
