Honey-Hickory Pulled Chicken Sandwiches

Guys, I realized something really profound today.  Actually, not at all.  Humor me anyway.


I realized I've forgotten all about my crock-pot.  Relegated to the back of the lowest, furthest cabinet from the kitchen island, it had gathered dust.  Clearly, I don't use my crock-pot as much as I could.

And why?  Why would I consciously deny myself the right to combine a few ingredients in a pot, turn a dial, walk away for eight hours, and then return to a fully-cooked dinner?

Mystery.  I mean, this glorious invention might not offer instant gratification like Marty McFly's Black and Decker Hydrator....but let's not be greedy.  This is big-time dinner help.

This crock-pot pulled chicken sandwich is a dinner dream.  Did you not see the picture above?  Look again.  (Not the hydrated pizza.  The sandwich, dang it!)  If you're not salivating, you're crazy.  This is straight out of a dream!

And in this particular dream, chicken, homemade honey-hickory barbecue sauce, and the futuristic crock-pot solve all of the world's major problems.

Listen, I don't want to lead you on.  This is not a dream.  This is real-life.  Your crock-pot can't secure world peace  but it can make you a hearty, melty, mood-altering pulled chicken sandwich for dinner.

Yeah...you've got some slow-cookin' to do.

And I've got some more ModCloth shopping to do.  I don't really have the time right now to offer more direction than "switch your crock-pot dial to the 'on' position".  We're friends though, I know you can deal.

This recipe was inspired by a phenominal-looking barbecue pulled pork sandwich that I witnessed this past weekend while dining out in celebration of my brother-in-law's engagement (No big deal.  JK, huge deal!  So excited!!!).

"Witnessed", meaning I'm an idiot for not ordering it too.  It looked so good!  And I havent been able to stop thinking about it all week.

So, to keep it on the lean and easy side, I give you slow-cooked, honey-hickory pulled chicken sandwiches.  Served with corn and honey-dijon broccoli slaw?  Stop it.  This is the stuff my dreams are made of.
 
Honey-Hickory Pulled Chicken Sandwiches

Yields 4 servings

Ingredients:
1 c ketchup
1/2 small onion, finely diced
2 garlic cloves, chopped
1 tbs honey
1 tbs apple cider vinegar
1 tbs molasses
1 tsp tomato paste
1 tsp Worcestershire sauce
2 tsp liquid smoke (I used hickory-flavored)
1/4 tsp ground ginger
1 pinch cayenne pepper
1 inch salt
1 lb boneless, skinless chicken breast
4 whole wheat sandwich rolls
pickle slices (optional)
cole slaw (optional)

Preparation:
Combine all ingredients except the chicken (ketchup through salt) in your slow cooker.  Mix well.


Add the chicken breasts, turning so that they are coated with the sauce.


Cover and cook on low for 8 hrs.  Gently shred the chicken with two forks, and stir so that the shredded chicken is evenly coated with the sauce.  Set the slow cooker to warm and let the chicken stand for 15 minutes to soak up the sauce.

Serve the pulled chicken on toasted rolls, and top with pickle slices and cole slaw as desired.
